Taste of Summer Vegetables

We’ve been enjoying the summer season for more than a few days already, but it’s right now — when July melts its way into August — that the summer harvest is at its peak. Summer squash are plentiful, bouquets of basil are everywhere, and tomatoes are starting to ripen. It’s at this moment that you should be running to the kitchen to take advantage of the most bountiful time of year.
To help you do just that, we gathered a handful of our favourite food bloggers who really know their way around summer produce. Not only are they experts at packing in as much summer flavor onto one plate, they seem to know exactly what we want to eat, even before we do. Check out these purveyors of summer cooking inspiration on our menu, then get yourself into the kitchen.
It`s all about summer season, we all LOVE vegetables, don`t you?
I Love ratatouille-eggplant, zucchini, peppers, and tomatoes all mingling together with flavors of fruity olive oil, thyme, oregano and fresh basil…
But it`s summer and what I don`t love is standing over a hot stove.
So I came up with this simple Grilled version of ratatouille. It`s not at all authentic, but I love how to char the grill flavors these vegetables.
Once grilled, I chopped up the vegetables into bite-sized pieces and tossed them with sherry vinegar, garlic and herbs de Provence ( which is basically a mix of dried thyme, oregano, rosemary, marjoram and lavender).
I supposed you could mix all of those spices together and add some lemon juice. Trust me once you tasted this, you will cook this again and again if you love there flavors as much I do. Enjoy.
For easy summer eating, I assembled these as toasts.
They`re delicious snack with a glass of wine (for my taste a nice Chardonnay or a nice crispy Sauvignon )
So remember they`re hearty enough to double a light dinner too…..
